    About this recipe: A hearty lamb casserole with sheep's kidney, cooked in tomato sauce with onions, carrots and sultanas.

    Serves: 4 

    • 2 onions, sliced
    • 3 small carrots, cut into rings
    • 1 tablespoon sultanas
    • salt and pepper to taste
    • 675g (1 1/2 lb) stewing lamb or lamb chops
    • 1 sheep's kidney
    • 225g (1/2 lb) tomatoes, sliced
    • 300ml (1/2 pt) lamb stock

    1. Preheat oven to 150 C / Gas 2.
    2. Place onions, carrots and sultanas in casserole dish and season. Add lamb and kidney. Top with sliced tomatoes. Cover with stock.
    3. Cook for 2 1/2 hours in the preheated oven.
