Orange cheesecake

    An easy cheesecake that requires no cooking! It's made with mandarin oranges and orange jelly. A great one to make with the kids.

    Makes: 1 cheesecake

    • 110g digestive biscuit crumbs
    • 40g melted butter
    • 1 (298g) tin mandarin oranges
    • 1 packet orange jelly
    • 225g cream cheese, softened
    • 150ml single cream

    Prep:20min  ›  Extra time:30min setting  ›  Ready in:50min 

    1. Mix crushed biscuit crumbs and butter together and spread over the base of 18cm (7 inch) tin with loose base.
    2. Drain can of mandarin oranges and make juice up to 300ml with water. Mix with orange jelly; set aside until almost set.
    3. Soften the cream cheese and beat in the semi-set jelly. Stir in mandarin oranges.
    4. Whip the cream and fold into the mixture.
    5. Pour onto biscuit base; refrigerate until set.
