About this recipe: This cake is not a sponge cake but don't let that stop you! It tastes more like a rich scone or shortcake with a jam centre. It's delicious served warm with freshly whipped cream.

Makes: 1 cake

  • 340g plain flour
  • 1 pinch salt
  • 3 teaspoons baking powder
  • 175g butter or margarine
  • 175g caster sugar
  • 1 large or 2 small eggs, lightly beaten
  • a little water
  • 50g strawberry jam, warmed
  • To glaze
  • milk
  • caster sugar

  1. Preheat oven to 190 C / Gas 5.
  2. Sift the flour, salt and baking powder into a mixing bowl. Add the butter and rub it together using your fingertips until it resembles breadcrumbs. Stir in the sugar. Add the egg and mix to a soft but not sticky dough, adding a little water if necessary.
  3. Shape into a ball and cut in half. On a floured surface, roll each half out into a circle about 1 1/2cm thick. Place one half on a greased baking tray, prick it all over and spread with warm jam, leaving a narrow margin around the edge.
  4. Cover with the remaining half of the dough, pinch the edges firmly together.
  5. Brush the top with milk and sprinkle with sugar.
  6. Bake in the centre of the preheated oven for 30-35 minutes, until well risen and golden brown.
  7. Cool on a wire tray.
