Easy chocolate fridge cake

    A simple and quick no-bake chocolate cake that's packed with pieces of Rich Tea® biscuits. This cake is best prepared one day before you plan to eat it. Store in the fridge.

    Ingredients
    Makes: 1 cake

    • 175g butter or cooking margarine
    • 4 tablespoons caster sugar
    • 4 tablespoons cocoa powder
    • 1 egg
    • 300g Rich tea® biscuits, broken into pieces

    Method

    1. Melt butter in a saucepan over low heat; stir in sugar, until dissolved. Remove from heat and add beaten egg, cocoa powder and beat well until evenly mixed. Stir in broken biscuits.
    2. Press into 23cm (9 inch) cake tin which has been greased and lined. Press down firmly.
    3. Chill for about 12 hours or overnight.
