Preheat oven to 170-180 C / Gas 3-4.
Layer potatoes in large ovenproof dish. Add sufficient amount of milk to the beaten egg to bring the liquid up to within 1.5cm of the top layer of the potatoes. Season with salt, pepper and herbs to taste.
Cover generously with grated cheese and then sprinkle on some nutmeg.
Cook in preheated oven for 45 to 60 minutes, until potatoes are cooked through.
