Hearty savoury pancakes, a nice change for any meal. For this recipe you need to make pancakes with a basic pancake batter and set aside. Or you can use shop-bought pancakes.

2 onions, peeled and chopped
450g (1 lb) minced beef
4 tablespoons tomato puree
2 tablespoons porridge oats
300ml (½ pt) water or beef stock
1 pinch mixed herbs
8 prepared pancakes
grated cheese or cheese sauce to taste

In a large frying pan heat oil and fry onions until golden. Add mince and cook until browned. Stir in tomato puree, oats, water or stock, herbs, salt and pepper. Bring to the boil, then reduce heat and simmer slowly, uncovered, for about 15 to 20 minutes.
Place some mixture along the centre of each pancake and roll up. Put in a greased baking dish and top with grated cheese or cheese sauce. Brown under grill.
This dish can be made early and the cheese added before reheating.
