About this recipe:
This pumpkin curry makes a great vegetarian main dish, but you can also add lamb, chicken or beef, if you like. Other vegetables can be added as well if desired.
1 tablespoon cooking oil
2 onions, chopped
1 cooking apple - peeled, cored and chopped
3 heaped teaspoons curry powder
1 tablespoon plain flour
water to moisten
900g (2 lb) pumpkin, peeled and chopped
2 medium-sized potatoes, peeled and chopped
2 chillies, seeded and chopped
- Heat the oil in a large saucepan. Brown the onion and apple.
- Mix curry powder and flour with a little water in a little bowl. Add to the apple mixture and add more water to desired amount.
- Add pumpkin and potatoes to mixture. Add the chillies. Bring to boil, then let simmer for about 30 minutes until pumpkin is tender and curry is thick.
While almost any pumpkin or winter squash will work, banana squash is best for this recipe.
You can leave the chillies whole and remove them before serving for a milder dish.
