Combine the honey, mustard and creme fraiche in a small bowl; set aside.
Melt the butter in a large frying pan over medium heat. Cook the pork and onion until golden, 7 to 10 minutes. Stir in the honey mixture and bring to a simmer; cook until heated through, about 5 minutes. Stir in parsley and season with salt and pepper.
