Pork fillet with creamy mustard and honey sauce

About this recipe: This fast and simple pork dish makes a great weeknight dinner. Serve with green vegetables and roasted potato wedges.

Serves: 4 

  • 2 tablespoons clear honey
  • 3 tablespoons whole grain mustard
  • 5 tablespoons creme fraiche or single cream
  • 1 tablespoon butter
  • 400g pork fillet, sliced
  • 1 large onion, chopped
  • Large handful of parsley, finely chopped
  • Salt and freshly ground black pepper, to taste

  1. Combine the honey, mustard and creme fraiche in a small bowl; set aside.
  2. Melt the butter in a large frying pan over medium heat. Cook the pork and onion until golden, 7 to 10 minutes. Stir in the honey mixture and bring to a simmer; cook until heated through, about 5 minutes. Stir in parsley and season with salt and pepper.
