Preheat the oven to 180 C / Gas mark 4. Lightly butter a baking tray.
Cream margarine and sugar together until light and fluffy; stir in flour and zest. Divide mixture into balls and spread evenly on the prepared baking tray. Lightly press into each ball with the back of a fork to flatten slightly.
Bake in the preheated oven until golden brown, about 12 minutes.
This recipes makes an absolutely delicious light, flavoursome biscuit. I wouldn't call it a shortbread but oh my it is very good all the same. I will be making this one again - thank you! - 18 Sep 2016
I decided to give this recipe a go instead of my usual one and was very disappointed. They were nothing like traditional shortbread biscuits. They were more of a cake consistancy rather than a biscuit. Maybe it was the fact that SR flour is used instead of plain. - 21 Jun 2015
