Sweet Norwegian pumpkin pickle

    A delightful Norwegian recipe for sweet pumpkin pickle. Serve with sandwiches or on the party buffet.

    Makes: 900 g (2 lb) pumpkin pickle

    • 900g (2 lb) pumpkin
    • pickling vinegar
    • 450ml (3/4 pt) malt vinegar
    • 900g (2 lb) sugar
    • 20g (2/3 oz) whole dried ginger (or a little bag of pickling spices)

    1. Peel pumpkin and cut into 2.5cm (1 in) cubes. Place into a big saucepan with water and boil for 5 minutes. Strain well and set aside.
    2. In another saucepan combine pickling vinegar, malt vinegar, sugar and ginger. Boil for 5 minutes. Add cooked pumpkin cubes to vinegar mixture. Boil together for 45 to 60 minutes till most of the liquid has evaporated. Pack in screw top jars.
