Glacé cherry cake

    Traditional is still the best when it comes to classic cakes like this light cake dotted with dark red glace cherries.

    Makes: 1 cake

    • 225g (8 oz) self-raising flour
    • 110g (4 oz) butter
    • 110g (4 oz) caster sugar
    • 75g (3 oz) glace cherries, chopped
    • 2 eggs
    • Splash of milk

    1. Preheat the oven to 180 C / Gas 4. Lightly butter a cake tin.
    2. Cream the butter and sugar together until white. Beat in the eggs, one at a time. Add the flour, cherries and milk, if required. Pour the mixture into prepared tin.
    3. Bake in the preheated oven until a skewer inserted into the centre of the cake comes out clean, about an hour.
