Ingredients
Makes: 1 cake
225g (8 oz) self-raising flour
110g (4 oz) butter
110g (4 oz) caster sugar
75g (3 oz) glace cherries, chopped
2 eggs
Splash of milk
Method Prep:15min › Cook:1hr › Ready in:1hr15min
Preheat the oven to 180 C / Gas 4. Lightly butter a cake tin.
Cream the butter and sugar together until white. Beat in the eggs, one at a time. Add the flour, cherries and milk, if required. Pour the mixture into prepared tin.
Bake in the preheated oven until a skewer inserted into the centre of the cake comes out clean, about an hour.
