Ingredients
Makes: 4 kg marmalade
- 3 oranges
- 1.8kg (4 lb) pumpkin
- 500ml (17 fl oz) water
- 1.8kg (4 lb) sugar

- Slice oranges finely. Peel pumpkin, remove the seeds and cut into small cubes.
- Place oranges in a saucepan and cover with water. Add pumpkin to another saucepan and cover with sugar. Let stand for 24 hours.
- Bring oranges to the boil, then add to pumpkin and sugar. Boil slowly till tender.
- Pot and seal.
