About this recipe: A really simple side dish. These aubergines are lightly seasoned with salt, pepper and garlic and cooked in the oven.

  • olive oil
  • 2 medium to large aubergines
  • salt and pepper to taste
  • 1 pinch finely chopped garlic

  1. Preheat oven to 190 C / Gas 5. Grease a baking dish with oil.
  2. Clean aubergines thoroughly. Slice off stem end, cut in half lengthways, and remove the seeds. Disturbing the flesh as little as possible, make criss-cross cuts down the length of each half, add a sprinkling of salt and pepper and a pinch of finely chopped garlic.
  3. Pack the aubergines lightly inside the greased baking dish, cut side up. Trickle a little more oil over them and bake in the preheated oven till tender, approximately 30 to 40 minutes.
