Fish cakes

    These simple smoked haddock and mashed potato fish cakes come together in a flash and take no time to cook! Serve as a starter or with a salad for dinner.

    Serves: 4 

    • 1 smoked haddock fillet, flaked
    • 4 potatoes, cooked and mashed
    • 1 tablespoon finely chopped fresh parsley leaves
    • 1 tablespoon breadcrumbs
    • 1 egg, beaten
    • pinch of salt and freshly ground black pepper, or to taste
    • splash of splash of milk, or as needed
    • 2 tablespoons oil, for cooking

    1. Combine flaked smoked haddock, mashed potatoes, chopped parsley, breadcrumbs, beaten egg, salt and pepper together in a bowl; add enough milk to bind together.
    2. Form mixture into 8 fish cakes.
    3. Heat oil in a large pan over medium-high heat; cook fish cakes on one side until golden brown and crispy, about 5 minutes. Flip the fish cakes over and cook on other side until golden; serve hot.
