About this recipe: Chestnut kinton is a traditional New Year's speciality in Japan. It is made with pumpkin, sweet potato and chestnuts. 'Kinton' literally means 'group of gold', hinting at the lovely hue of this puree as well as financial success for the New Year.

  • 250g (9 oz) pumpkin puree
  • 250g (9 oz) sweet potato puree
  • 225g (8 oz) peeled chestnuts
  • sea salt
  • 1L water

  1. Combine the pumpkin and sweet potato purees. Season the mixture with salt to taste and set aside.
  2. Cook the chestnuts in the water for 1 to 1 1/2 hours, or until pasty. Season with salt, then stir in the pumpkin and sweet potato mixture. Bring just to the boil. Serve.
