South African sweet pumpkin fritters

    • 225g (8 oz) cooked pumpkin
    • 110g (4 oz) flour
    • 1 teaspoon baking powder
    • 1/4 teaspoon salt
    • 2 eggs
    • oil for frying
    • 50g (2 oz) caster sugar
    • 1 teaspoon cinnamon
    • 1 lemon

    1. Mix the pumpkin, flour, baking powder and salt thoroughly, then add the beaten eggs.
    2. Form into flat rounds 8cm (3 in) across and 2.5cm (1 in) deep and fry till brown in smoking lard or hot butter.
    3. Mix the cinnamon with the sugar, sprinkle over the cooked fritters and serve with cut lemon.
