Quick and easy blackcurrant jam

    It doesn't get much easier than this tangy blackcurrant jam - all you need are freshly picked blackcurrants, sugar and water. The jam is ready in about 30 minutes.

    Makes: 4 jars of jam

    • 1.8kg (4 lbs) blackcurrants
    • 2.4 litres water
    • 1.8kg (4 lbs) sugar

    1. Put blackcurrants and water in a heavy-based saucepan; bring to the boil and cook for 15 minutes. Add the sugar, stir to dissolve and bring back up to the boil; simmer for an additional 15 minutes.
    2. Lladle the jam into sterile jars leaving a small headspace. Seal jars in a hot water bath. Refrigerate jam after seal is broken.
