About this recipe: A perfect balance of sweet and tart, Seveille oranges make a wonderful marmalade. Though this recipe requires a lot of time, it is worth it!

Makes: 6 jars (approx)

  • 6 Seville oranges
  • 2.8 litres (6 pints) cold water
  • 2.7kg (6 lbs) granulated sugar
  • 1 lemon, juiced

  1. Slice oranges very thinly, remove pips, cover with water and let stand for 24 hours.
  2. Put fruit and water into a preserving pan and gently boil for 2 hours. Add sugar and boil an additional 1 1/2 hours, stirring often. Stir continuously during the last 30 minutes, mixing in the lemon juice. Pour into sterilised jars.
