About this recipe: These curry cupcakes have a nice spicy taste. For the home cooks who are looking for an adventure in the kitchen.

Serves: 4 

  • 2 eggs
  • 75g caster sugar
  • 75g self raising flour
  • 1 teaspoon hot curry powder
  • Buttercream
  • 50g margarine or unsalted butter
  • 100g sieved iceing sugar
  • 1 teaspoon mild curry powder

Prep:10min  ›  Cook:20min  ›  Ready in:30min 

  1. Break eggs into mixing bowl and whisk lightly. add sugar and whisk well until thick and creamy. Lightly fold in the mild curry powder and flour. Put into cupcake cases.
  2. Bake in a preheated 180 C / Gas 4 for 20 minutes or until risen.
  3. For curry buttercream, cream butter gradually and add the icing sugar and curry mild curry powder.
  4. When cakes are cool cover with the buttercream.
