Delicious Dundee cake

    This rich and delicious cake goes wonderfully with a cup of hot tea and a slice of cheese or a smear of butter.

    Makes: 1 cake

    • 450g (1 lb) flour
    • 225g (8 oz) butter
    • 450g (1 lb) currants
    • 450g (1 lb) sultanas
    • 110g (4 oz) mixed peel
    • 225g (8 oz) sugar
    • 3 eggs
    • Pinch of salt
    • 1 teaspoon baking powder
    • 2 teaspoons mixed spice
    • 110g (4 oz) blanched almonds
    • Splash of milk

    1. Cream the butter and sugar until light and fluffy; beat in eggs.
    2. Combine the flour, currants, sultanas, mixed peel, salt and mixed spice in a bowl. Add dry ingredients alternately with milk to the butter mixture; stir in baking powder. Pour into the prepared tin and scatter almonds on top.
    3. Bake in the preheated oven until a skewer inserted into the centre of the cake comes out clean, about 4 hours.
    4. Preheat the oven to 150 C / Gas mark 2.
