About this recipe: These yummy cookies are quick and easy. The flavours of maple and walnut go so well together. You could use pecans, too.

Makes: 14 to 16 cookies

  • 115g (4 oz) unsalted butter, softened
  • 115g (4 oz) brown soft sugar
  • 1 tablespoon maple syrup
  • 1/2 teaspoon vanilla extract
  • 175g (6 oz) self-raising flour
  • 100g (3 1/2 oz) crushed walnuts
  • 100g (3 1/2 oz) chocolate chips

  1. Preheat oven to 180 C / Gas 4. Grease a baking tray with melted butter.
  2. Place the butter and sugar in a mixer and beat until light and fluffy, then add syrup and vanilla.
  3. Add the flour to the mixture till mixed in, then stir in the chocolate chips and crushed walnuts using a spatula.
  4. Roll the mixture into 14 to 16 balls and place on baking tray, spaced well to allow for spreading.
  5. Bake for 10-12 minutes or until pale golden at the edges. Remove from oven, cool on the baking tray for 2 minutes, then transfer to wire racks to cool completely. Enjoy.

I didn't have self raising flour, so I substituted with plain flour + backing powder. They turned out well...both my son and I loved them 🤗🤗 - 14 Oct 2016
