    A delightful pâté with a wonderful smoky kipper flavour, perfect as a starter for your next dinner party. Serve with bread or on melba toast.

    Serves: 6 

    • 130g (4 1/2 oz) margarine
    • 1 onion, finely chopped
    • 1 clove garlic, crushed
    • 350g (12 oz) kipper fillets, roughly chopped
    • 170g (6 oz) cottage cheese
    • 1 1/2 tablespoons dry sherry
    • 1 OXO® onion cube, crumbled
    • salt and pepper, to taste

    • lemon twists
    • parsley

    1. In a frying pan, melt 40g margarine and add the onion and garlic. Cook and stir for 1 to 2 minutes. Add the roughly chopped kipper fillets and cook for a further 5 minutes.
    2. Remove from the heat and add the cottage cheese, onion cube, sherry, seasoning. Mix or blend until smooth.
    3. Place pâté mixture in 6 individual dishes. Melt remaining margarine and pour a little over the surface of each pâté dish.
    4. Chill in the fridge until set. Garnish with a twist of lemon and parsley.
