    About this recipe: This very simple and quick to prepare jam pudding can be used with any flavour jam that you prefer or have too much of!

    Makes: 1 pudding

    • 225g (8 oz) any kind of jam
    • 110g (4 oz) plain flour
    • 1 teaspoon baking powder
    • Pinch of salt
    • 50g (2 oz) butter
    • 50g (2 oz) ground almonds
    • 50g (2 oz) caster sugar
    • 1 egg
    • 2 tablespoons milk

    1. Preheat the oven to 180 C / Gas mark 4.
    2. Spread the jam in the bottom of a pie dish. Sift together flour, baking powder and salt. Rub in butter until mixture resembles breadcrumbs. Stir in almonds and sugar. Fold in egg and milk; pour mixture on top of jam.
    3. Bake in the preheated oven until sponge is set, about 30 minutes.
