About this recipe:This very simple and quick to prepare jam pudding can be used with any flavour jam that you prefer or have too much of!
Makes: 1 pudding
225g (8 oz) any kind of jam
110g (4 oz) flour
1 teaspoon baking powder
Pinch of salt
50g (2 oz) butter
50g (2 oz) ground almonds
50g (2 oz) caster sugar
2 tablespoons milk

Preheat the oven to 180 C / Gas mark 4.
Spread the jam in the bottom of a pie dish. Sift together flour, baking powder and salt. Rub in butter until mixture resembles breadcrumbs. Stir in almonds and sugar. Fold in egg and milk; pour mixture on top of jam.
Bake in the preheated oven until sponge is set, about 30 minutes.
