Jam sponge pudding

    This very simple and quick to prepare jam pudding can be used with any flavour jam that you prefer or have too much of!

    Makes: 1 pudding

    • 225g (8 oz) any kind of jam
    • 110g (4 oz) plain flour
    • 1 teaspoon baking powder
    • Pinch of salt
    • 50g (2 oz) butter
    • 50g (2 oz) ground almonds
    • 50g (2 oz) caster sugar
    • 1 egg
    • 2 tablespoons milk

    1. Preheat the oven to 180 C / Gas mark 4.
    2. Spread the jam in the bottom of a pie dish. Sift together flour, baking powder and salt. Rub in butter until mixture resembles breadcrumbs. Stir in almonds and sugar. Fold in egg and milk; pour mixture on top of jam.
    3. Bake in the preheated oven until sponge is set, about 30 minutes.

    Very easy to do and quite delicious! Added some vanilla extract and more ground almonds which was lovely.  -  19 Oct 2015


    Disapponted ... not enough eggs & didn't realise until too late, had to add lots more milk, cooked up very stodgy!  -  22 Feb 2018


    Loved this pudding- added more milk as mixture was quite stiff- turned out well  -  23 Jul 2017
