    About this recipe: An impressive little side dish of asparagus wrapped in bacon or pancetta. You can do the assembly ahead of time and then roast just before serving. What a lovely presentation this makes!

    Serves: 4 

    • 1 bunch asparagus, trimmed
    • 1 tablespoon olive oil
    • 4 rashers streaky bacon or pancetta
    • salt and freshly ground black pepper, to taste

    Method
    Prep:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Preheat the oven to 200 C / Gas 6.
    2. Toss the asparagus in the olive oil so that all spears are well coated. Divide the asparagus into four equal bunches. Wrap each bunch in a bacon rasher, securing with a wooden skewer if necessary. Place on a roasting tray and season with salt and pepper.
    3. Roast for 10 to 15 minutes in the preheated oven, or until the bacon is crisp and the asparagus is tender.
