Roast asparagus and bacon

    An impressive little side dish of asparagus wrapped in bacon or pancetta. You can do the assembly ahead of time and then roast just before serving. What a lovely presentation this makes!

    Serves: 4 

    • 1 bunch asparagus, trimmed
    • 1 tablespoon olive oil
    • 4 rashers streaky bacon or pancetta
    • salt and freshly ground black pepper, to taste

    1. Preheat the oven to 200 C / Gas 6.
    2. Toss the asparagus in the olive oil so that all spears are well coated. Divide the asparagus into four equal bunches. Wrap each bunch in a bacon rasher, securing with a wooden skewer if necessary. Place on a roasting tray and season with salt and pepper.
    3. Roast for 10 to 15 minutes in the preheated oven, or until the bacon is crisp and the asparagus is tender.
