Chicken and bacon in red berry cider

    A wonderfully filling, good old slow cooker recipe! The saltiness of the bacon and wholegrain mustard counter balance the sweet berry cider sauce.

    Serves: 6 

    • 6 skinless chicken thighs or breasts
    • olive oil, for frying
    • 1 large onion, chopped
    • 3 cloves garlic, chopped
    • 2 large smoked gammon steaks
    • ground black pepper
    • 250ml Bulmers No17 Cider with Crushed Red Berries & Lime®
    • 1 chicken stock cube
    • 100ml hot water
    • 1 tablespoon manuka honey or similar
    • 1 tablespoon wholegrain mustard
    • 1 tablespoon cornflour
    • 4 teaspoons milk
    • chopped fresh parsley to garnish

    1. Seal the chicken in a little olive oil in a frying pan.
    2. Meanwhile chop onions and garlic and put into the base of the slow cooker. Cut the gammon steaks with kitchen scissors into 1" squares and place on top of the onions and garlic
    3. Add chicken pieces to the slow cooker and season with the black pepper according to your taste.
    4. Pour the cider on to the top of the chicken.
    5. Mix 1 chicken stock cube with 100ml of hot water and add the wholegrain mustard and the honey. Stir until the honey has dissolved then pour the mixture into the slow cooker.
    6. The liquid should just cover the chicken pieces, if not add a little more water.
    7. Cook on the LOW setting for 6 to 8 hours.
    8. Half an hour before serving mix the cornflour and milk together and stir into the chicken dish. Turn up the slow cooker to high for half an hour to let the sauce thicken.
    9. Finally, sprinkle with chopped parsley and serve.


    Add some mushrooms too for a more substantial dish!
    Serve with creamy mashed potatoes and a steamed green veg.

    This is the worst recipe I have tried on this site. It tastes awful, watery and weird. Followed the recipe to the letter and will never make it again. Had to have peppercorn sauce on my chicken to try and take away the taste of the sauce.  -  18 Feb 2014
