Spanish salmon burgers

    A burger with a difference. Combining raw and smoked salmon provides a packed with flavour base from which to create a moreish treat for all the family.

    Serves: 4 

    • 2 fillets fresh salmon, skin and bones removed and finely chopped
    • 100g smoked salmon, finely chopped
    • 1/2 onion, finely chopped
    • 1 tablespoon finely chopped dill
    • touch of lemon juice, to taste
    • 1 egg yolk, lightly beaten
    • salt and pepper to taste
    • mashed potatoes, as needed
    • plain flour for dredging
    • vegetable or sunflower oil for frying

    1. Combine salmon with smoked salmon (if you want, can blitz with blender). Mix in onion, dill, lemon juice, egg yolk and seasoning.
    2. Add potatoes to thicken mixture sufficiently to roll into balls.
    3. Roll balls in flour and flatten into burger shapes.
    4. Heat oil in large frying pan, add burgers and cook on medium heat turning to ensure brown on both sides until fish just cooked through.
