    About this recipe: This cranberry and clementine sauce pairs perfectly with roast duck. It also works well with turkey, goose or chicken.

    Ingredients
    Serves: 6 

    • 235ml chicken stock
    • 1 tablespoon thinly sliced clementine rind (takes about 3)
    • 50g cranberries
    • 2 tablespoons thick set honey
    • 1 tablespoon red currant jelly
    • 2 tablespoons Grand Marnier® or other orange liquour
    • Salt and freshly ground black pepper, to taste

    Method
    Prep:5min  ›  Cook:25min  ›  Ready in:30min 

    1. Put stock in a saucepan and boil rapidly to reduce by half, about 15 to 20 minutes. Add 1 tablespoon of clementine rind, cranberries, honey, jelly and Grand Marnier. Season with salt and pepper.
    2. Simmer sauce gently until mixture becomes a syrupy sauce, but the cranberries stay whole. To serve with duck: Arrange clementine slices on sliced duck and pour sauce over.

    I had to adapt this for the ingredients I had: used orange, blackberry & apple jelly and damson gin with the stock, honey & cranberries, in reduced quantities as I was only making for 2. It worked very well & I would make again. - 07 Dec 2016
