Easy peasy coconut macaroons

    Dead easy and quick to make. Everytime I make these, they never last more than 1/2 hour! They're egg free, to boot.

    Serves: 12 

    • 1 (397g) tin condensed sweetened milk
    • 120g desiccated coconut
    • 1 tablespoon plain flour
    • 2 to 3 drops vanilla extract
    • glace cherries, for the top

    1. Preheat oven to 180 C / Gas 4. Add all ingredients (apart from the cherries) in a bowl; mix well.
    2. Grease a baking tray. Form the mixture into small mounds; arrange on tray.
    3. Bake for between 10 to 15 minutes or until light brown on the top. Press half a glace cherry on top while they cool.

    Had to tweak the recipe a bit, used 150 of coconut, 50 grams of plain flour and a tspn of vanilla extract. Cut the cooking time to 10 mins. Delicious.  -  21 Mar 2017
