Chicken and chestnut mushroom pie

    Heart warming chicken and mushroom pie. I make it at home for friends and family and they love it. Serve with thin green beans and salad potatoes.

    Makes: 1 chicken and mushroom pie

    • vegetable oil, for frying
    • 1/2 onion, diced
    • 2 garlic cloves, crushed
    • 500g chestnut mushrooms, cleaned
    • 500g leftover chicken, diced
    • few springs thyme, fresh or dried
    • 2 celery stalks, cleaned and sliced
    • 1 litre chicken stock
    • 500 g puff pastry

    1. Preheat oven to 180 C / Gas 4.
    2. Heat oil in a large saucepan; add diced onion and garlic. Cook until soft but not too coloured. Add celery and cook for an additional 2 minutes.
    3. Stir in sliced mushrooms and diced cooked chicken. Pour in chicken stock and add thyme. Heat through.
    4. Portion into separate baking dishes or a large casserole dish. Cover with ready made puff pastry and bake until golden brown.
