About this recipe:Looking for fun ideas for a kids party, cake sale or to celebrate Halloween? Try these owl cupcakes, extremely easy to prepare. All you need are biscuits, sweets and a little creativity!
Makes: 24 cupcakes
250g plain flour
400g caster sugar
110g unsweetened cocoa powder
1 teaspoon salt
2 teaspoons baking powder
1/2 teaspoon bicarbonate of soda
1 teaspoon vanilla extract
125ml vegetable oil
250ml hot water
For the icing
200ml double cream
200g mascarpone cheese
50g caster sugar
50g unsweetened cocoa powder
48 Oreo® cookies, or similar
48 brown Smarties® or M&M's®
24 orange or yellow Smarties® or M&M's®

Preheat oven to 180 C / Gas 4 and prepare line muffin tins with 24 paper cases.
In a bowl, mix together the sifted flour with 400g sugar, 110g cocoa powder, salt, baking powder and bicarb.
In a second bowl whisk together eggs, vanilla, buttermilk and vegetable oil.
Mix the wet and the dry ingredients, then mix in the hot water.
Divide the mixture evenly between the prepared cases. Bake the cupcakes for 12 minutes.
Let the cupcakes cool down and prepare the icing. Whip the cream and gently add the mascarpone cheese, sugar and cocoa. Ice each cooled cupcake with 1 tablespoon of the icing.
Prepare the owls: open Oreos®, keeping the white icing all on one side. Stick 2 of the iced sides on each cupcake, using them as the whites of the owl's eyes. (Reserve the un-iced sides for another use.)
Stick a brown Smartie® or M&M® on each Oreo® to create the pupils. Add the orange or yellow in the centre as a beak. Repeat with remaining cupcakes.
You can use the un-iced sides of the cookies in other recipes, such as an Oreo® cheesecake or milkshake, or you can crush them to use in a biscuit base recipe.
