Saucy fudge pudding

    Delicious low fat chocolate pudding that is quick and easy to make, and nearly impossible to mess up.

    Makes: 1 fudge pudding

    • 1 cup all purpose flour
    • 2 teaspoons baking powder
    • 2/3 cup granulated sugar
    • 2 tablespoons cocoa powder
    • ¼ teaspoon salt
    • ¼ cup melted butter
    • ½ cup milk
    • 2 tablespoons cocoa powder
    • 1 3/4 cups hot water
    • ½ teaspoon rum or vanilla extract
    • 2/3 cup brown sugar

    1. Measure the first 5 ingredients into a bowl and combine well.
    2. Add milk and melted butter. Mix and scrape into a greased 8 inch (20cm.) casserole dish.
    3. In the same (now empty) bowl mix sugar and cocoa together.
    4. Add hot water and extract.
    5. Stir to dissolve sugar.
    6. Pour over batter. Do not stir.
    7. Bake, uncovered, in 180 degree oven for about 40 minutes or until batter has risen above sauce and is firm to touch.


    Best to let stand 10 minutes before serving with your favourite vanilla ice cream.
