Tahini rolls

    These are traditional rolls from Cyprus, both tasty and healthy for your child to take to school and for the entire family to enjoy.

    Serves: 12 

    • 500g plain flour
    • 1 tablespoon caster sugar
    • 1 pinch salt
    • 8g dried active baking yeast
    • 5 tablespoons cooking oil
    • water as needed
    • 350g tahini
    • 2 to 3 teaspoons ground cinnamon
    • 200g brown sugar
    • 100g caster sugar
    • honey to glaze

    1. Mix together the flour, 1 tablespoon sugar, salt and yeast. Make a well in the centre. Add the oil, then gradually add enough warm water to form a soft dough. Start with 250ml, then increase gradually. Knead the dough for a few minutes, then set aside in an oiled bowl to rest.
    2. Combine the tahini, brown sugar, caster sugar and cinnamon. Set aside.
    3. After resting, on a floured work surface, roll out the dough to a thin rectangle, about the size of a baking tray. Spread with the tahini mixture, leaving a 1cm space around the edges. Roll it up lengthways, then slice into rounds. Place in a greased baking dish.
    4. Mix the honey with about 1 tablespoon of water, then brush over the rolls.
    5. Bake in a preheated 170 C / Gas 3 oven for 30 minutes, or till risen and golden. Enjoy.


    Don't overcook these rolls; watch them carefully. Keep them in a plastic bag to stay fresh for many days.

    Liked these rolls, but would have liked more detail in the ingredients/instructions, e.g., the amount of honey to use with the 1 tablespoon of hot water, the exact size of the baking dish. I got 16 good-sized rolls instead of 12.  -  30 May 2016
