About this recipe: " My take on an Italian classic. Absolutely delicious. The ideal appetiser and/or starter for parties. Fit for any table and/or occasion. "



  • Baguette - toasted then sliced lengthways into 4 to 6in lengths
  • Clove Garlic - peeled
  • Extra Virgin Olive Oil
  • Fresh Vine and/or Italian Plum Tomatoes - thinly sliced or chopped
  • Handful Basil leaves - torn
  • Salt and freshly ground Black Pepper
  • Optional - Parmesan Cheese - grated


  1. Gently rub the toasted slices with garlic clove, spread on the tomatoes and scatter over the torn basil;
  2. Season to taste with salt and pepper;
  3. Drizzle over with olive oil;
  4. To add or not - Sprinkle over with grated Cheese
