About this recipe: This cake is filled with nuts and fruit - almonds, apricots, orange and cherries. It's the perfect Christmas cake to serve at home or give as a gift.

Makes: 1 cake

  • 8 dried apricot halves
  • 225g (8 oz) butter, softened
  • 225g (8 oz) sugar
  • 3 eggs, beaten
  • 225g (8 oz) plain flour
  • 1 pinch of salt
  • 1/2 orange, juiced
  • 110g (4 oz) glace cherries
  • 110g (4 oz) almonds, chopped
  • splash of milk

  1. Preheat the oven to 170 C / Gas 3. Lightly grease and flour a cake tin.
  2. Soak apricot halves in warm water for 30 minutes; drain and cut into small pieces.
  3. Cream butter and sugar together until light and fluffy. Beat in eggs; stir in flour, salt, orange juice, cherries, almonds and apricots. Add a dash of milk if necessary to improve consistency; pour into prepared tin.
  4. Bake in the preheated oven until a skewer inserted into the centre comes out clean, about 3 hours.
