2tbsp Extra Virgin Olive Oil
1 clove Garlic - finely chopped
1oz Onion - finely sliced
300g/10oz cooking Chorizo - cut into 2.5cm/1in chunks
1tbsp flat leaf Parsley - finely chopped
200ml/7fl oz Dry Red Wine

Put oil in a frying pan on medium hot heat;
Add the garlic and onion and cook, stirring occasionally, for 2-3 minutes, or until softened a bit;
Add the chorizo and cook for 1 to 2 minutes, stirring a bit and turning once, until it’s oil begins to flow freely;
Add the wine, and cook further, stirring occasionally, until reduced to just coating the chorizo;
Tip into a serving dish, garnish with the parsley and serve with crusty bread.
