Mediterranean Style Chorizo Tapas

Slightly spicy sausage combined with onion, garlic and wine becomes a mouthwatering feast on it's own, never mind the rest"

    • 2tbsp Extra Virgin Olive Oil
    • 1 clove Garlic - finely chopped
    • 1oz Onion - finely sliced
    • 300g/10oz cooking Chorizo - cut into 2.5cm/1in chunks
    • 1tbsp flat leaf Parsley - finely chopped
    • 200ml/7fl oz Dry Red Wine


    1. Put oil in a frying pan on medium hot heat;
    2. Add the garlic and onion and cook, stirring occasionally, for 2-3 minutes, or until softened a bit;
    3. Add the chorizo and cook for 1 to 2 minutes, stirring a bit and turning once, until it’s oil begins to flow freely;
    4. Add the wine, and cook further, stirring occasionally, until reduced to just coating the chorizo;
    5. Tip into a serving dish, garnish with the parsley and serve with crusty bread.
