Lemon curd cake with lemon drizzle

    This lemon cake is easy to make and tastes divine when you pour a drizzle icing on top while the cake is still warm.

    Makes: 1 cake

    • 110g butter
    • 110g caster sugar
    • 2 eggs, beaten
    • 140g self-raising flour
    • 1 tablespoon lemon curd
    • 1 lemon, zested and juiced
    • 3 tablespoons granulated sugar

    1. Preheat the oven to 180 C / Gas mark 4. Lightly grease a 20cm cake tin.
    2. Cream butter and caster sugar together until light and fluffy; stir in eggs, flour, lemon curd and 1/2 the lemon rind.
    3. Pour mixture into prepared tin and bake in the preheated oven until a skewer inserted into the centre of the cake comes out clean, 30 to 45 minutes.
    4. While the cake is still hot, combine remaining lemon rind, lemon juice and granulated sugar in a bowl; pour over cake. Leave cake in tin until cool.
