    About this recipe: Tasty shortbread squares that are gluten free and dairy free. Everyone will enjoy this gluten free shortbread. Read your labels on the ingredients to ensure all are 100% gluten free.

    Serves: 12 

    • 125g margarine
    • 2 tablespoons honey
    • 4 tablespoons cane sugar
    • 125g rice flour
    • 125g cornflour

    1. Mix softened margarine, honey and cane sugar until fluffy and light. Whisk in sifted flours until well mixed. Press into ceramic baking dish.
    2. Bake in a preheated oven at 180 C / Gas 4 for 30 minutes or until golden brown and pulling away from edges of dish.
    3. Allow to cool before cutting into small squares. It will be soft similar to brownie texture, when cooled.
