    Serves: 6 

    • 4 eggs, separated
    • 1 tablespoon caster sugar
    • 100g plain chocolate, melted

    1. Whisk egg yolks with an electric beater until lighter in colour.
    2. Whisk egg whites until fluffy; add sugar and continue to whisk until stiff peaks form.
    3. Add well-beaten yolks to melted chocolate mixture; fold in egg whites.
    4. Spoon chocolate mousse into a glass serving bowl or individual ramekins; chill in the fridge until set, about 3 hours.
