About this recipe:
This is an adapted recipe from an American friend. After tasting them I just had to have the recipe but my hubby needs gluten free.
225g butter or margarine
300g caster sugar
1 teaspoon vanilla extract
475g plain gluten free flour
1/2 teaspoon salt
pie filling of your choice (or prepared fruit)
- Set the oven to 180 C / 160 C Fan / Gas 4. Line or grease an 8x12 inch baking tin.
- Mix all the ingredients together except the pie filling to a thick cookie-dough like consistency
- Spread 3/4 of the mix over the tin, then spread the filling over the top. Finally dot the rest of the mix over the top.
- Bake in the oven for 35 minutes but no longer. Cool and cut into squares.
Gluten free tip
As with all gluten free recipes, read labels of ingredients to ensure they are 100% gluten free before baking.
Nice taste but a bit gritty - possibly due to the rice flour. I may try and add a couple of tbsp of milk next time.

I added a little baking powder, turned out very moist, made a perfect morning tray of muffins & squares.
