Mimi's crab salad

    A delicious crab salad served up in a small pineapple. Very easy to make and always a wow when people taste it! You must chill this for a minimum of an hour before serving for all the ingredients to mingle. It does contain almonds so be careful if anyone is allergic to nuts! Serves two. The quantities depend on the size of your pineapples!

    Serves: 2 

    • 1 small pineapple
    • 1 tin best quality white crab meat, drained
    • 1 handful almonds, roughly chopped
    • 1 to 2 sticks celery, chopped
    • 1 squirt tomato ketchup
    • 2 to 4 tablespoons mayonnaise
    • chives, finely chopped, to taste
    • salt and pepper to taste

    1. Slice the pineapple in two. Scoop the inside out and put into a bowl. Reserve for another use.
    2. Mix crab meat, almonds, celery, ketchup, mayonnaise and chives, and season. Chill in the fridge for about 1 hour.
    3. When chilled put all the ingredients back into the pineapple, decorate with some of chive and serve.


    Do not leave it a warm place or you will find the mayonnaise becoming too runny and it will make your dish too liquid. This can also be made in a big salad bowl but the presentation in the small pineapples always looks good!
