About this recipe: Mixed dried fruit is soaked in cold tea overnight for a fruit loaf cake that's guaranteed moist. Serve slices toasted and slathered in butter for a breakfast or tea time treat.

Maida Black

Makes: 1 loaf

  • 225g (8 oz) mixed dried fruit
  • 110g (4 oz) demerara sugar
  • 220ml (7 1/2 fl oz) cold tea
  • 1 large egg, beaten
  • 225g (8 oz) self-raising flour

Prep:5min  ›  Cook:1hr15min  ›  Extra time:8hr soaking  ›  Ready in:9hr20min 

  1. Combine dried fruit, sugar and tea; leave to soak overnight.
  2. Preheat the oven to 180 C / Gas 4. Lightly grease a loaf tin.
  3. Add egg and flour to dried fruit mixture; mix well and turn into prepared tin.
  4. Bake in the preheated oven until a skewer inserted into the centre of the loaf comes out clean, 75 to 90 minutes.


Why not try adding some flavourful additions to the cake mixture before baking? Try mixed spice, orange zest, or cinnamon.
