Moist lemon curd cake

    This delightfully moist lemon curd cake is very easy to make and absolutely delicious. Top with a lemon glaze for an extra treat.

    Makes: 1 (18cm) lemon cake

    • 85g (3 oz) butter
    • 110g (4 oz) sugar
    • 5 tablespoons lemon curd
    • 3 eggs
    • 250g (9 oz) self raising flour
    • 1 pinch salt

    Prep:5min  ›  Cook:1hr  ›  Extra time:10min cooling  ›  Ready in:1hr15min 

    1. Preheat the oven to 180 C / Gas 4. Grease a 18cm (7 in) tin.
    2. In a bowl, cream together the butter and sugar with the lemon curd until light and fluffy. Beat in the eggs, one at a time and then sift in the flour. Mix thoroughly and pour into the prepared tin.
    3. Bake for 1 hour until risen and firm and a skewer inserted into the centre comes out clean. Leave to cool for 10 minutes before turning out onto a cooling rack.
    4. Slice and serve.

    Spooned the mix into 16 bun cases and baked for 20 min then made a topping by mixing 2 tablespoons of lemon curd and icing sugar until it formed a paste. Delicious!  -  02 May 2014
