About this recipe: This large chocolate sponge cake is light in texture and filled with a buttercream icing. If you like, you can even glaze it with melted chocolate. This is a good sized cake for a birthday celebration.

Makes: 1 (25cm) chocolate cake

  • For the cake
  • 280g (10 oz) butter
  • 280g (10 oz) sugar
  • 5 large eggs
  • a few drops vanilla extract
  • 250g (9 oz) self raising flour
  • 25g (1 oz) cocoa powder
  • 2 teaspoons baking powder
  • For the buttercream icing
  • 225g (8 oz) butter
  • 225g (8 oz) icing sugar

  1. Preheat oven to 180 C / Gas 4. Grease a round 25cm (10 in) springform cake tin.
  2. For the cake:

  3. Cream the butter and sugar together in a large bowl until light and fluffy. Stir in the eggs, one at a time, mixing well after each addition. Add a few drops of vanilla extract and stir.
  4. In a separate bowl combine the flour, cocoa and baking powder and mix well. Stir into the egg mixture and pour into the prepared cake tin.
  5. Bake in the preheated oven for 50 minutes, until a skewer inserted in the centre of the cake comes out clean.
  6. Allow the cake to cool for 10 minutes before turning it out onto a cooling rack.
  7. For the buttercream icing:

  8. Beat together the butter and icing sugar until light and fluffy.
  9. When the chocolate sponge is completely cooled, cut the chocolate cake in half horizontally and spread the butter icing over the base then sandwich with the second layer on top.

If I wanted to make this a rectangular cake rather than using a round cake tin what size cake tin should I use for the volume? Thanks Claire x - 05 Nov 2015


I've previously tried several sponge cake recipes which all turned out like hard crusty bricks. Wasn't sure if it was my new fan oven or if I was just rubbish. Jean I take my hat off to you, big big thank you!! One extemely light and fluffy sponge cake now sat in the kitchen! (I split it between two 10inch sandwich tins) Best recipe I've come across and I have now added it to the recipe book I will pass on to my daughter one day. Yippeeee :-) - 19 Apr 2015
