About this recipe: These delightful loaf cakes are flavoured with Ovaltine® and contain dried fruit and golden syrup. They are egg free and perfect for afternoon tea. This recipe makes two Ovaltine® loaves.

Makes: 2 loaf cakes

  • 340g (12 oz) self raising flour
  • 4 tablespoons Ovaltine®
  • 55g (2 oz) caster sugar
  • 4 tablespoons golden syrup
  • 300ml (1/2 pt) milk
  • 170g (6 oz) mixed dried fruit

  1. Preheat oven to 180 C / Gas 4. Grease two 450g (1 lb) loaf tins.
  2. In a bowl, combine the flour, Ovaltine® and sugar. Add the golden syrup and pour in the milk. Mix well and add the fruit. Once the mixture is well blended, pour into the prepared loaf tins, dividing evenly between the two.
  3. Bake in the preheated oven for 1 hour until a skewer inserted in the centre comes out clean. Allow to cool, before turning out onto a cooling rack.
  4. When fully cooled, slice and serve.

Lovely idea however Ovaltine® contains eggs.Maybe best to use cocoa powder or drinking chocolate to be truly egg-free. - 18 Dec 2013
