Chiku's chocolate chip cookies

Method
Prep:10min  ›  Extra time:30min cooling  ›  Ready in:40min 

1. Warm the oven up to around 185 to 190. Line a good few baking trays and/ or sheets with baking parchment (I find Asda's is the best one out of all supermarkets own brand 'Asda chosen by you non-stick GREASEPROOF & BAKING PAPER')
2. In a large mixing bowl cream the shortening and butter together till light and fluffy. (I normally use an electric whisk but you do this using a spatula or preferably a wooden spoon.)
3. Add the two sugars and mix well with electric or wooden spoon til light and fluffy.
4. Next add the Vanilla Extract and the beaten eggs and continue mixing until well combined.
5. Now the Flours and Bicarbonate of Soda can be combined into the mixture but do this in four stages as it makes mixing a lot easier.
6. Once all is combined well you can add your Chocolate Chips or whatever else you may fancy into the mixture and fold well.
7. Grab a teaspoon and add a heaped tsp of the mixture onto your tray/ baking sheet but make sure you there are about 4 to 5 centimetres between each. Once done place in the oven for about 10 to 13 minutes (dependant on ones oven). Remove from oven when times up and get the next tray in. Leave the cookies on the tray that you've just taken out to cool for a few minutes or so then transfer to a cooling rack.
8. Make yourself and the family a nice cup of cocoa/ tea / milk or coffee and try out the cookies
9. If you want to you can also freeze this mixture but just make sure that when you want to bake it that you take it out of freezer 2 days before and transfer to fridge. Then the day before baking you remove from fridge and leave overnight on the worktop to bring it to room temp.
