Malagueña Style Crispy Oven "Fried" Fish

About this recipe: "A tasty difference in cooking fish. Packed with flavour, this oven method delivers a crispy treat for all the family. Brilliant with fries and tartare sauce"



  • 4 x 180g/6oz Firm White Fish Fillets (Cod/Haddock/Tilapia)
  • Vegetable Oil Spray
  • 1 Egg - lightly beaten
  • 120ml/8tbsp Full Milk
  • 1tbsp Lemon Juice - or to taste
  • 60g/2oz Plain Flour
  • 60g/2oz dried Breadcrumbs
  • 2tsp Paprika - or to taste
  • ¾ tsp Cayenne Pepper
  • 1tsp Salt and sprinkling of freshly ground Black Pepper


  1. Position oven rack on top shelf of oven;
  2. Preheat oven to 260c/550f/Gas 10
  3. Line a shallow baking oven tray with foil and set a wire rack on top;
  4. Lightly spray rack with oil;
  5. Pat fish fillets dry with paper towels and slice them in half lengthwise to form long pieces;
  6. In a large, wide shallow dish, whisk the egg, milk and lemon juice together and set aside for some 10 minutes;
  7. In another similar dish, combine well together the flour, breadcrumbs, paprika, cayenne and salt and pepper;
  8. Working with one fillet at a time, lightly coat each one with the flour mixture;
  9. Shake off any excess flour and dip each one in egg/milk mixture, turning to coat evenly;
  10. Shake off any excess liquid and coat each one again in the flour mixture;
  11. Shake off any excess flour again and place on wire rack;
  12. Lightly spray each fillet with oil evenly coating them on both sides; (This step is essential for crispy fish);
  13. Place baking tray on top oven rack and bake for some 12 to 15 minutes until the fish coating is crisp and golden;


Can reduce or omit Paprika and Cayenne for a still tasty but less piquant dish
