Simple corn chowder

    Basic fresh ingredients, easy peasy, no cheese. Vegetarian, or can be vegan. Uncomplicated by condensed milk, or cheese, this relies on sweetcorn for its flavour.

    Serves: 4 

    • drizzle of olive oil
    • 1 large white or red onion, chopped smallish
    • 2 large white potatoes, peeled and diced
    • 2 large tins sweetcorn (or similar quantity fresh in season)
    • 600ml (1 pint) vegetable stock
    • milk to your taste
    • salt and pepper
    • 1 teaspoon of cream, soured cream or yoghurt to each bowlful (optional)

    1. Put the chopped onion in the heated oil to soften for a few moments. Add the diced potato and continue to cook on a low heat for another few moments until this softens.
    2. While the onion and potato are cooking put the two tins of corn into a blender and mix until creamed, but leave some texture there. Add to the pan and mix well.
    3. Add the stock, bring to the boil and add milk to at least cover the vegetables.
    4. Cover the pan and simmer for about 15 minutes. Season.
    5. Serve in bowls with the teaspoon of cream, soured cream or yoghurt, if desired. Enjoy!!!


    My family, notoriously picky eaters, just loved this. Hurrah, something to add to the 'repeat' list.
