This was so simple and quick to make, I really enjoyed it. I added a pinch of paprika to serve, because I like a bit of spicy kick. I made it with red onion because that was all I had to hand, but it turned the chowder a slightly yucky colour when I blended the base veg and stock. I made a large batch of this soup out of my store cupboard for a village soup lunch while we were cut off by snow. Not only was it incredibly easy to make, it was delicious - one giant empty pot at the end of the soup lunch, and lots of compliments. . . . and yes I took all the credit !!! - 03 Mar 2018
