Banana muffins with cinnamon streusel topping

    Made with wholemeal flour so slightly healthier than your average banana muffin. It's up to you if you want to top them with a crunchy brown sugar streusel-style topping!

    Ingredients
    Serves: 10 

    • For the banana muffins
    • 180g wholemeal flour, sifted
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground cinnamon
    • 3 ripe bananas, mashed
    • 120g unsalted butter, melted
    • 1 large egg
    • 150g caster sugar
    • 1 teaspoon vanilla extract
    • For the streusel topping
    • 60g dark brown sugar
    • 2 tablespoons wholemeal flour
    • 1/2 teaspoon ground cinnamon
    • 1 tablespoon unsalted butter

    Method

    1. Preheat the oven to 190 C / Gas mark 5. Lightly grease 10 muffin cups, or line with paper bun cases.
    2. Whisk 180g sifted wholemeal flour with bicarbonate of soda, baking powder, salt and 1/2 teaspoon cinnamon in a large bowl. Mix together mashed bananas, 120g melted butter, egg, sugar and vanilla in a separate bowl. Gently fold banana mixture into dry ingredients until just moistened. Spoon mixture into prepared muffin cups, filling them about 3/4 full.
    3. For the streusel topping: Mix dark brown sugar with 2 tablespoons wholemeal flour and cinnamon in a bowl. Mash 1 tablespoon butter into mixture with a fork until mixture resembles breadcrumbs. Sprinkle topping over muffins.
    4. Bake in the preheated oven until a skewer inserted into the centre of a muffin comes out clean, about 20 minutes.

    This recipe is the best ever! I was searching and searching for the healthy and delicious baked goods and the idea of moist banana muffin yet entirely whole wheat flour muffin was very tempting. It was very moist. I added organic chia seeds to the flour mixture, and used 1/2 cup of unpasturized honey and 1/2 organic cane sugar instead of white and brown sugar for the topping.     Very good. I didn't do the streusal topping--I'd run out of steam by then, so just topped with a sprinkle each of cinnamon and brown sugar. Hubs and niece really enjoyed them; niece says 4 1/2 stars. Hubs says he'd like more banana flavor--but it was good as is, and he says he always would like more banana flavor. I don't have a flour sifter, so just put the wheat flour in the KA for a while and ran it--wasn't sure it'd work, but it did. Muffins came out moist and not at all dense.     Just took these muffins out of the oven- they are delicious warm with a cold glass of milk.
