Steak and kidney pudding (vegetarian version)

About this recipe: This is a steamed pudding that masquerades as a steak and kidney pudding.

Makes: 1 vegetarian pudding

  • For the suet pastry:-
  • 8 oz flour
  • pinch salt
  • 1/2 tsp baking powder
  • 6 oz vegetarian suet
  • water or milk
  • For the filling:-
  • 1 pkt Quorn chunky pieces
  • 1/2 lb mushrooms
  • 1 onion
  • salt and pepper to taste
  • 1 oz butter
  • 2 tbsp flour
  • milk
  • 1 tsp marmite
  • a few drops of gravy browning

  1. First make the suet pastry
  2. Seive the flour, salt and baking powder into a blender.
  3. Add the suet and turn onto low speed
  4. Add the water or milk until you have a firm, dry dough.
  5. Roll out most of the dough and line a bowl
  6. roll out the remainder and save for the lid
  7. Chop the onions finely and fry slowly in a little oil.
  8. Chop the mushrooms into large chunks and add these as well as the Quorn pieces to the onions.
  9. Meanwhile make a basic roux sauce with butter, flour and milk and then add the tsp of marmite. A few drop of browning will darken it nicely.
  10. Mix the sauce into the mushroom/Quorn mix and then pour into the pastry lined bowl.
  11. wet the edges of the pastry and place the lid on top. crimp the edges well.
  12. Tie a pudding cloth over the top and then steam for 2 hours being careful not to let the pan dry out.
  13. Delicious served with mash or other seasonal root veg :-)
