Preheat the oven to 200 C / Gas 6. Line a baking tray with baking parchment.
In a saucepan, melt the butter and add the thyme and parsley. Split the pitta bread rounds into two slices and brush with the herb butter and season well with pepper. Cut into small triangles and transfer to the prepared baking tray.
Bake in the preheated oven for 10 to 15 minutes until golden and crisp. Serve warm.
